Ingredients

  • 1 white onion, chopped
  • 6 cloves garlic, chopped
  • 4 tsp olive oil
  • 2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp red chilli pepper flakes
  • 1/4 tsp cayenne pepper
  • 2 cans black beans, strained
  • 2 tbsp water
  • 8 eggs
  • 2 tbsp butter
  • 6-8 radishes, julienned
  • 1/2 cup cilantro, chopped
  • 1 lime or fresh lime juice
  • Tortilla chips/strips, wonton strips or fried onions for garnish
  • Optional: Hot sauce
  • Optional: Homemade guacamole

Instructions

  1. Heat olive oil in a saucepan on medium heat. Add onions and cook until tender. Add garlic, cumin, salt, chilli flakes and cayenne, and cook another 1-2 minutes.
  2. Add beans and water and cook over medium-low heat until soft (a few minutes). Mash together, leaving a few chunks. Stir in 1 tbsp of cilantro and a squeeze of lime juice.
  3. Fry eggs in butter, sprinkling with salt and pepper to taste.
  4. Spread black bean mix on the bottom of a wide bowl. Lay fried eggs on top and garnish with radishes, fresh cilantro, a lime wedge and tortilla strips. Optional: serve with a spoonful of homemade guacamole.

Notes

Based very loosely on this recipe, but found the tortillas to be too tough and difficult to eat.
