Guacamole

This one comes straight from Miss Betty Young of Roswell, NM, of whose guacamole I could eat for the rest of my life – it’s that good. I’ve added onions to this recipe, in favour of my dad and his revelatory experience of having onions in his guac for the first time in Mexico.

Ingredients
- 1 medium or large avocado, ripe
- 1 tbsp Pace chunky hot salsa*
- 1 small clove garlic, minced
- 1/4 tsp salt
- 1 tbsp cilantro, chopped
- 1 tbsp white or red onion, diced fine
- Squeeze of lime or lemon juice
*Pace’s chunky hot salsa is the only salsa Miss Betty will use for her guacamole. If unavailable, use finely diced tomatoes and some hot sauce.
Instructions
- Cut open and scoop avocado flesh into a bowl and use a fork to mash until smooth.
- Add remaining ingredients and mix together. Season to taste with additional salt, pepper, hot sauce, lime juice or red chilli pepper flakes.
Notes
Best served the next day, once flavours have had a chance to come together.
Rule of thumb is one avocado per person. If sharing amongst four people, quadruple the recipe!
